Description

A heartwarming and cozy noodle soup filled with the vibrant flavors of ginger and garlic, perfect for chilly evenings and family gatherings.

Ingredients

  • 2 lb Chicken thighs, boneless skinless
  • 6 oz Scallions (1 bundle)
  • 3 inches Ginger (1 piece)
  • 1 cup Carrot, diced
  • 6 Garlic cloves, minced
  • 1/4 cup Soy sauce
  • 8 oz Ramen noodles or dried curly noodles
  • Freshly ground Black or white pepper, to taste
  • Crispy chili oil, for garnish
  • 4 tsp Kosher salt, to taste
  • 1/4 cup Black rice vinegar
  • 2 tbsp Toasted sesame oil
  • 10 cups Water

Instructions

  1. In a large pot, combine 10 cups of water and bring it to a boil.
  2. Add the chicken thighs and cook for 15-20 minutes until fully cooked. Remove and shred the chicken, then set it aside.
  3. In the same pot, add chopped ginger, minced garlic, and diced carrots. Simmer for 5-7 minutes until the vegetables soften.
  4. Stir in soy sauce, black rice vinegar, and sesame oil.
  5. Add ramen noodles and cook according to package instructions (4-5 minutes).
  6. Return the shredded chicken to the pot and mix well.
  7. Season with kosher salt and freshly ground pepper to taste.
  8. Serve hot, garnished with chopped scallions and a drizzle of crispy chili oil.

Notes

For a creamier texture, blend a portion of the soup before mixing it back in. Adjust noodle types based on preference, and always opt for fresh ginger and garlic for the best flavor.
