Description

A vibrant and healthy dish featuring layers of sweet potatoes, beets, creamy burrata, and crunchy walnuts, drizzled with pesto.

Ingredients

  • 2 medium sweet potatoes, peeled and sliced into rounds
  • 2 medium beets, cooked or roasted, sliced into rounds
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 3 tbsp basil pesto (homemade or store-bought)
  • Burrata cheese
  • Chopped walnuts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato slices with olive oil, salt, and pepper, then arrange them on a baking sheet.
  3. Roast the sweet potato slices in the oven for about 20-25 minutes, flipping halfway through, until they are tender and slightly caramelized.
  4. While the sweet potatoes are roasting, prepare the beets if not already cooked.
  5. To assemble, stack a slice of sweet potato, a slice of beet, and a dollop of pesto.
  6. Repeat layers until all ingredients are used.
  7. Top with a piece of burrata cheese and sprinkle with chopped walnuts.
  8. Serve warm and enjoy!

Notes

For a variation, consider using goat cheese instead of burrata or add roasted pears for a fruity twist.
