Description

A colorful and flavorful dish that combines taco ingredients with pasta for a fun meal.

Ingredients

  • 1 lb Ground beef, lean
  • 15 oz Black beans, canned
  • 2 cups Cherry tomatoes
  • 8 oz Corn, canned
  • 2 cups Iceberg lettuce
  • 16 oz Catalina dressing
  • 1 lb Rotini
  • 1 packet Taco seasoning
  • 2 cups Fiesta blend cheese
  • 9 oz Nacho cheese Doritos
  • 3 tbsp Sour cream

Instructions

  1. Cook the rotini according to package instructions; drain and let cool.
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess grease and add taco seasoning.
  3. In a large bowl, combine the cooled rotini, cooked beef, black beans, cherry tomatoes, corn, and chopped iceberg lettuce.
  4. Pour in the Catalina dressing and mix until well combined.
  5. Gently fold in the fiesta blend cheese and crush the nacho cheese Doritos on top for added crunch.
  6. Serve with a dollop of sour cream on each serving, if desired.

Notes

For added crunch, consider mixing in the Doritos just before serving. This salad holds up well in the fridge for meal prep.
